What's your favorite J. Selby's menu item? Dirty Secret! The Herbivorous Butcher beaf with J. Selby’s love, it’s a magical thing. Second favorite are the Sweet Chili wings! 
What's your favorite thing to do in the Cities? Sculpture Garden, exploring plant based eateries,  and the super cool theater, Grandview in Saint Paul. 
What's your favorite animal? Eagle; freedom, and power! 
What is something you're passionate about? Why? Living a life full of experiences, and adventures! Over the past 2 years I’ve lost 200lbs, 13 pant sizes, 5 shirt sizes, completed a half marathon (Earth Day Run), will do a second half in a few weeks (Monster Dash), decided to move to Denver, CO, and realized my only limits are the ones I believe exist, so I stopped believing in limits (I’m a huge fan of personal development). I do something that works my body, AND mind every day. 


What made you decide to follow the vegan diet/lifestyle? It originally started as a 30 day challenge to restrict my eating as I was super morbidly obese, and needed something to reset my habits. After those 30 days, I felt great and decided to keep going. I watched a few documentaries, Earthlings is the one that absolutely made me commit to a Plant Based lifestyle. I’ve been vegan for 12 years, wasn’t always a healthy vegan (college/university years, yikes!), but I’m back to healthy, hence the extreme weight loss, and I have recently started living Zero Waste, really cool way to live, makes you look at the world differently. We are a very wasteful, and destructive society. 
What is one piece of advice you'd offer to someone hoping to become vegan or eat plant-based? There are many plant based versions of the foods you’re eating now, so replace what you eat now with the plant based versions. Simple plant based swaps, and then explore from there. Do your body, the planet, and fellow sentient beings a favor, and go plant based.
